This marinade is perfect for summer. It’s bright citric notes balance the fresh minced garlic and the rosemary is the perfect compliment to chicken, fish and freshly grilled vegetables. In fact, it’s so good my kids ate zucchini for the first time last week. #momwin!

Lemon Garlic & Rosemary Marinade

Ingredients
Zest of one lemon
Juice of two lemons
4 tablespoons of extra virgin olive oil
1 clove of garlic, minced
1 teaspoon of minced fresh rosemary
1 teaspoon of kosher salt
 
Directions
In a medium bowl, combine lemon zest, lemon juice, olive oil, garlic, rosemary, & salt. Proceed to brush on everything.

Chicken

I like to marinade my chicken a bit longer than most, so instead of 30 mins, I’ll typically go for 2 – 3 hrs. This let’s all that yummy lemon and garlic permeate every bit of the chicken. Reserve a little to brush on in the last minutes of grilling.

Vegetables

My favorite veggies to use this marinade with are mushrooms, zucchini and asparagus. Mushrooms only require a light brushing and a turn or two of freshly cracked salt and pepper before grilling or baking in the oven. For asparagus, I like to lay them in a single layer in a shallow dish and grizzle about 1/4 of the marinade over them—enough to give a light coat them. Leave for roughly 30 mins while you’re doing other things (like, checking instagram, let’s be honest). Grill or roast until just tender, but still firm. Roughly 15 minutes depending on temp.
